Bill Smith has been with Fabian's so long that when the opportunity arose in 2008 to take over ownership, the transition was virtually unnoticeable. Bill continues in the same Fabian's tradition to hand-pick a fresh, seasonal nightly menu, and to produce a unique and unforgettable dining experience at every seating. Each evening's menu is verbally delivered to the guests before Bill embarks to the kitchen to work his culinary magic.
